Giles Fry Appointed as Chief Operating Officer at TGI Fridays UK

London, England, United Kingdom, November 2025 — Giles Fry has started a new position as Chief Operating Officer at TGI Fridays UK, marking a significant leadership addition for the iconic global hospitality brand. In this role, he will contribute to strengthening operational excellence, elevating guest experience, and driving the company’s strategic growth across the UK.

Giles Fry joins TGI Fridays UK after more than 21 years of impactful leadership at SNUG BARS LIMITED, where he served as Managing Director and Owner. During this period, he led financial budgeting, strengthened cash flow governance, and drove strategic planning initiatives that consistently increased property asset value year after year. His ability to cultivate a high-performance culture and build deeply engaged teams established him as a respected hospitality leader.

Before his entrepreneurial journey, Fry spent seven years at TGI Fridays as General Manager, where he refined his capabilities in restaurant operations, customer service management, new store openings, and people development. This early experience with Fridays shaped his leadership philosophy and gave him hands-on insights into the brand’s culture and service ethos.

Earlier in his career, he worked for two years at Coffee Republic as Operations Manager, strengthening his expertise in operations management, employee training, communication, and performance coaching across multiple locations.

Beyond corporate leadership, Fry has contributed significantly to public service and education governance. He served nearly four years as a District Councillor at St Albans City & District Council, including responsibilities as the Lead Councillor for Strategy & Resources. In addition, he spent more than six years as Chair of Governors at Killigrew Infant & Primary School, overseeing curriculum accountability, financial oversight, and governance excellence. For more than 15 years, he has also been an active Member of UKHospitality, contributing to sector-wide advocacy and leadership discussions.

Matthew Breitfelder is Partner and Global Head of Human Capital at Apollo, where he focuses on attracting extraordinary talent to the firm and creating an innovative, inclusive, high-performance culture that brings out the best in Apollo’s people. Matt leads Apollo’s recruiting, talent management, compensation, succession planning, citizenship, employee relations, development, and culture work. He is also a member of the firm’s Leadership Team. Matt is committed to expanding opportunities across Apollo’s workplace, marketplace, and communities. Prior to joining Apollo, Matt was Chief Talent Officer at BlackRock as well as a member of the Operating Committee. Previously, he held strategy, talent, and innovation roles at Mastercard, PwC, and CEB/Gartner.

Matt holds a BA in Economics from the University of Southern California, an MSc from the London School of Economics, and an MBA from Harvard Business School. He currently serves on the boards of the Lumina Foundation, the Aspen Institute’s Business and Society program, the Milken Institute’s Inclusive Capitalism initiative, and Georgetown University’s initiative on AI, Analytics, and the Future of Work. He is the co-author of numerous Harvard Business School case studies and articles on leadership. Matt has been recognized as a Top Global CHRO multiple times by n2Growth and Stanford Business School.
